Since the cooler days of fall have come upon us, it is now time to get into the kitchen and start baking again. We recently discovered a quick and super easy recipe (just FOUR ingredients) that will make you fall in love with these moist Almond Joy Cookies!
I shared this picture on my Instagram and promised it would be up soon, so here it is!
ALMOND JOY COOKIE RECIPE
14 oz. shredded coconut
2 cups semi-sweet (or dark) chocolate chips
2/3 cup chopped almonds
14 oz. sweetened condensed milk (I used the Eagle brand)
1.Preheat the oven to 325 degrees.
2. Mix all ingredients in a bowl.
3. Scoop spoonfuls onto greased cookie sheet (this will be sticky so wet hands to mold into cookie shape and flatten the tops)
4. Cook about 15-20 minutes or until top is lightly browned. If you like it moist don't cook it too long.
5. Then cool and enjoy!
Makes about 20 cookies and best when served warm. Store in an airtight container to retain moistness.

It was so easy, my oldest son made it with no problems and was whipping out batches for our large family! (What is it about boys who like to bake in our family?)
