Fresh & Healthy Apricot Sorbet



We are attempting to eat healthier at our home lately, I have really been enjoying a lot of the organic produce that they have over at Costco and at our local farmer's market. I am making sure to go more heavy on veggies and fruits and have cut out the sweets. Okay, except ice cream. That still my weakness!

My husband has been fasting and is on his 28th day. I know that sounds pretty incredible but it is not the first time he has done it--he actually went 60 days one time and even wrote a book about it!

Well, since we are trying to get healthier around here, I am going to try to share more healthier recipes for our readers! Today we are going to make a healthy and fresh Apricot Sorbet.  It is so easy and here is what you will need:


3 cups ripe apricots, peeled, pitted, and diced
1/4 cup coconut oil
1 vanilla bean
Juice of 1 lime, about 1 TBSP
1/2 cup pitted dates
1 cup water

Blend apricots, coconut oil, vanilla bean, lime juice, and dates.

Add only enough water as needed to blend smooth.

 Pour into your ice cream maker and freeze.

If you do not have an ice cream maker but it into a bowl and put it in the freezer. Stir frequently until frozen!
