Butternut Squash Spaghetti Sauce Recipe



Are you always looking for new ways to add more vegetables to your dinner?

With my nine children I am always looking for news ways to slip in a little more veggies here and there.

Since we are still in our Focusing on Fall series, I wanted to share how you can add butternut squash to your pasta dish to make it tastier and more nutritious.

In fact, you can use butternut squash, acorn squash, spaghetti squash or even pumpkin if you'd like. It just depends on your preference. And since it is fall,  they are definitely easy on the budget since they are in season right now.




Being a busy mom of a large family I often will grab something easy like Bertolli's Tomato and Basic Sauce because it is quick and has Tuscan- inspired deliciousness that all of my family enjoys. It's a great base in dishes and can be used in all kinds of other recipes from stews, soups, and casseroles.


I like that they also have a wide variety of sauces that I can pick from.

Here is the simple recipe:


INGREDIENTS


2 lbs  cooked sausage or shrimp
3 jars Bertolli Tomato and Basil sauce
1-2 cups cooked and pureed squash or pumpkin (to your liking)
mixed California style blend vegetables (optional)
onion
garlic
Italian spices




DIRECTIONS:

1. Saute the onion and garlic and then add in the meat or shrimp.

2. Add sauce and puree and heat to a simmer. Then add veggies.

3. Top with garlic salt, pepper, and spices.

4. Boil your choice of pasta as directed and then serve on top of it.

5. Garnish and add grated cheese or even hot sauce if you like it spicy!

Serve with a yummy salad!
